The cold, wintery evenings are getting longer and one of the best ways to deal with these would be to enjoy a nice warm beverage. With this weeks ‘Warm Drink Wednesday’, we sample the deliciously creamy and wonderfully alcoholic ‘Cosy Coquito’. A Soak&Sleep twist on the standard Coquito; an eggnog-like beverage traditionally served in Puerto Rica, but with the added kick of Irish whiskey and Bailey’s.
Here’s the step-by-step guide & video of how to make this tropical treat:
~ 1 Cup of Warm Coconut Milk
~ 1 Capful of Irish Whiskey
~ 1 Capful of Bailey’s
~ 1 Egg Yolk
~ 1 Capful of Vanilla Extract
~ 1 Teaspoon of Sugar
~ A Pinch of Nutmeg
Add 1 teaspoon of sugar to the cup/jug of coconut milk, mix together and then heat up the in microwave.
Crack the egg and separate the yolk from the white. You’ll be using the yolk, so once separated, place this in the cup you’ll be making the beverage in. Then add a capful of vanilla extract to the yolk and mix together.
Once the coconut mixture has been heated up, add it to the yolk mixture in your cup.
Then round off this beverage with a capful of Irish whiskey and a capful of Bailey’s (or you can be a bit more generous). Give it one final mix and top it off with a pinch of nutmeg.
Now you can enjoy your eggnoggy, cocnutty, alcoholic(y?) winter warming beverage.
